Even though it's ugly, VLC is a sweet little media player. I have yet to find a media file it can't handle. I also like Pidgin -- it's not as pretty as some other clients, like Trillian or Digsby, but it's truly open source and it does work pretty well. (I know you Mac folks like Adium, but it uses the same libraries, so it's all related.)

I really like the PortableApps suite. It has actually drawn my attention to other cool open source programs that I have installed in the non-portable form. That's how I discovered ClamWin and PDFTK.
