Oooh...do you need a cake for this?
Today, the 26th of January is Australia day.
So for all you Aussies (and non-aussies wishing to join in the party),

Oh yes, I have been invited to a barbie for Australia Day. And I'm running late!
At least Australia wasn't colonised by the French. Imagine being without cricket. All the blokes would have to have huge moustaches, stink of garlic and play boule on a Saturday afternoon. "Lets go to the SBG to watch the boules test on Boxing Day..." doesn't have the same attraction does it? And the women wouldn't shave their pits.
But think of the food, the glorious food!!
Talk of changing the flag to represent all comers has reared its head again. I say leave it but change the coat of arms ... remove the Emu, shoot the Kangaroo, and add a pint glass plus a kebab. That should cover a most continents.

Squares of sponge cake rolled in gooey chocolate and covered in coconut..yum yum..![]()
But the sponge cake bit isn't like normal sponge cake.. Somehow it's slightly different, and better!
I think the original lamingtons were made with left over sponge cake, by the the chef of the then governor of Queensland Lord Lamington...Apparently he was asked at short notice to provide food for some unexpected guests, so he cut up some old sponge cake, dipped it in a chocolate mixture and rolled them in coconut...the cakes were a hit with the guests and it is rumoured that the guests asked Lady lamington for the recipe..So was born an Australian icon...
Looks like day-old (at least) sponge cake is best..In my opinion, good, home made lamingtons are superior to store bought ones, but I like them all..
Had damper with vegemite and a cold beer. You fucking beauty.
Spooky...! I had some crispbreads with cheese and marmite. Flushed down with a mug of tea. Rather a nice lunch I thought. That must be remotely similar to damper with vegemite...
Had to do without the beer, I was driving afterwards...
Damper is a very heavy and doughy bread. Vegemite is brewery poo.
I think it's the coconut that puts me off. I don't like all the Asian desserts with grated coconut on it, and maybe that's why lamingtons have never been an option I consider
