To avoid 'sheep thinking', and to neutralise votes for an individual rather than to feel the need to follow the current majority, would you agree it may be a good idea to have an *option* to hide the current amount of votes for/against until a user's vote has been cast?

Yes actually I think that's a great idea.  I try very hard not to let popularity influence the way I think about things, but I'm sure that sometimes it does, even if only on a subconcious level.
