Is each post a listing that gets added to the review database? If so, how can I make posts that aren't "reviewable"?

That's how it works with the included themes or auto-embed, yes. You would have to edit the themes with custom logic to not call the rating functions on posts that aren't "reviewable". There are many examples of doing so in this forum (mainly excluding categories or pages).
